                                       Pumpkin Rolls
3/4 cup flour                                                     1 teaspoon vanilla
                                                                        3 eggs
1 cup granulated sugar                                       2/3 cup canned pumpkin
1 teaspoon baking soda                                     sprinkle of nutmeg
1 teaspoon ground cinnamom
 
 
filling :
1 ( 8 oz cream cheese )
4 tablespoons melted butter
1 teaspoon vanilla
1 cup confectioners sugar
 
 
soften cream cheese- mix ingredients in medium bowl. pour mixture onto greased cookie sheet with sides ( can use spray cooking spray for pan. lay a piece of wax paper on pan and spray the paper  then pour the mixture onto it )
preheated oven at 350  bake 15 to 20 minutes
lay down clean towel and place piece of wax paper over towel
flip cake onto wax paper
peel off wax paper then cover again with same paper
roll with towel and paper while hot
let cool
 
 
 
blend filling ingredients until very smooth.
unroll cake  remove top paper
spread filling onto cake and reroll without paper
cover with plastic wrap
refrigerate untill ready to use
cut and serve

   Ham Roll-ups
 
2-pkg 8 0z. cream cheese   (softened )
1-pkg ranch salad dressing mix
3-green onions  ( chopped )
11-flour tortillas  ( 8 inch )
22-thin slices deli ham
 
 
in small bowl mix crm. cheese & dressing mix until smooth.   add onions  mix well.
spread 3 tablespoons over each tortilla, top each with 2 ham slices.
roll up tightly ans wrap in plastic wrap
refrigerate untill firm.
unwrap cut into 3/4 " slices
 
makes about 7 1/2 dozen

OLD-FASHION BUTTER CAKE


Prep.time 10 minutes
Baking time 1 hours (approx.)
Oven temp. 350 F


1 cup butter (NO SUBSTITUTES)
2 cups sugar
1 tsp Pure Vanilla extract
3 eggs
2 cups all-purpose flour
1 tsp baking soda
1 tsp salt
1 cup whole milk



1. Beat together butter and sugar until fluffy.
2. Beat in vanilla. Add eggs one at a time, blending well after each addition.
3. Combine flour with baking soda and salt. Add to batter alternately with milk, beginning and ending with flour.
4. Butter and flour cake pans. Pour in batter.
5. Bake at 350 F for about 1 hours or until a tester inserted in the center comes out clean.
6. Allow cake to stand 5 to 10 minutes. Invert pans to remove cake from pans. Finish cooling on a rack.
7. Frost with your favorite frosting or dust with powdered sugar. Just
be sure that the cake is completely cooled before frosting or dusting with powdered sugar.

Apple Squares


3 eggs
1 cup oil
teaspoon baking soda
cup chopped walnuts
1 teaspoon vanilla
4 medium sized apples, chopped fine
1 cups sugar
2 cups flour
1 teaspoon cinnamon



1. Preheat oven to 3500 F
2. Grease a 9 x 13-inch baking pan
3. Beat eggs for one minute and then add sugar gradually, then the oil. Beat for another minute.
4. Mix in baking soda, flour, cinnamon and vanilla.
5. Fold in chopped apples and walnuts.
6. Mix all together and turn into baking pan.
7. Bake for 40 to 45 minutes. When cool, either frost or sprinkle with powdered sugar. Do not cover.
